Hm. What you can do is select a single tag, check all the files associated with this tag. Then, once you're done, click on the selected tag - this will cause it to turn red and become negated. Punakea will then display all files that are _not_ tagged with this tag - which is then the rest of your files.
A bit cumbersome at the moment, but it should work.
at the moment we do not have any way to track changes, sorry. The actual document count per tag can be quickly found out by selecting a tag, selecting all the result files (using e.g. cmd+a). The info pane then displays the number of selected tags (click the 'i' button in the lower left of the browser window to access the info pane).

And I like the tag cloud because it gives a certain amount of visibility to the popular tags, but what if I want actual document counts per tag?
